Sambal dishes stand out as beloved culinary treasures in Malaysia, taking centre stage in the country’s popular breakfast dish, Nasi Lemak. The rich and vibrant flavours of sambal have become an integral part of Malaysia’s gastronomic heritage, captivating the hearts and palates of those who savour its delicious essence. While the main ingredients in a sambal paste are generally standard, the beauty lies in the delightful variations that emerge from diverse households and regions. Recipes can differ subtly or significantly, with each cook infusing their own special, often secret, twist. 

Traditionally, the deep umami hit in sambal paste comes from shrimp paste or ‘belachan.’ However, fuelled by passion and a commitment to inclusivity, I embarked on a mission to ensure that everyone regardless of dietary preferences, could enjoy this culinary delight by creating a sambal that is both vegan and gluten free. While some may opt for a blow-your-head-off version, I prefer to maintain a balanced approach. Though labeled as ‘spicy’ rest assured that while there’s a noticeable kick, it won’t numb your taste buds. Instead, you’ll experience a delicious blend of flavours allowing you to savour the taste while still enjoying a hint of spice. It our has undergone the most rigorous quality control from my mum  with a resounding thumbs-up!

EASY Chicken sambal

The perfect quick dish for those busy crazy days where you want an easy meal without having to compromise on flavour. Serves 3-4.

Instructions:

  1. Cut three chicken breasts into chunks.
  2. Heat a jar of Dapur Mariae Sambal Sauce in a saucepan.
  3. Add the chicken and cook on a medium heat until the chicken is tender.
  4. Served with basmati rice and salad or stir fried vegetables.

Sambal & Seafood

This is a marriage made in heaven and also a quick meal!

Instructions:

  1. Warm a jar of Dapur Mariae Sambal Sauce in a wok, saucepan or frying pan.
  2. Add your desired seafood, a personal favourite is king prawns.
  3. Serve with fluffy rice and salad.

Vegan & Vegetarian Suggestions

The ideal dish for anyone who doesn’t eat meat or fish but still loves a unique dish with a beautifully complex flavour.​

Instructions:

  1. Warm a jar of Dapur Mariae Sambal Sauce in a wok, saucepan or frying pan.
  2. Add your desired vegetable, a personal favourite is grilled aubergine slices or fried tofu.
  3. Serve with fluffy rice and salad.

Kota Bahru Chicken

This recipe takes a little more time than the others but well worth a go. Given to my mum years ago by my Aunty Marie, it was a popular dish in my household. It’s a perfect experimental dish for a weekend when you’ve got a little more time to on your hands.

I promise that it will be a firm favourite and one that you will be making again and again.

Ingredients:

  • 8 chicken thighs

For The Marinade:

  • 1 teaspoon of tumeric
  • 1 teaspoon of ground coriander
  • 1 teaspoon of black pepper
  • salt

For The Garnish:

  1. Slice all vegetables.
  2. Cut chicken breast into chunks or strips.
  3. Warm a sauce pan on a medium heat and add peanut sauce.
  4. Add chicken once sauce is warm
  5. Cook chicken until tender
  6. Once chicken is tender, add vegetables and cook just long enough for your vegetables to have a crunch.

Instructions:

  1. Rub the chicken evenly all over with the marinade and set aside in the fridge for at least half an hour.
  2. Whilst the chicken is in the fridge, slice the onion, garlic and ginger into juliennes, and deep fry till golden brown. You have to watch this process closely as it can burn in the blink of an eye. Drain on kitchen towel and set aside.
  3. Using the same oil that you fried the sliced ingredients in, deep fry the chicken until golden brown and cooked thoroughly until the juices run clear. Drain on kitchen towel.
  4. In a clean wok or frying pan, warm the jar of sambal, then add the chicken pieces and coat evenly.
  5. Serve garnished with the fried ingredients, and the chopped coriander.

Top Tips

Spice Up Your Rice & Noodles

Try zinging up your stir fried noodles, rice, or even vegetables with a dollop or two of sambal sauce. It can be added at any point!

Use As A Dipping Sauce

Place a few spoonful’s straight from the jar into a dipping bowl to spice up your night! Why not try mixing a tablespoon of mayonnaise for something a bit creamier with a kick!
