Roasted Spatchcock Chicken


  • 1 whole chicken
  • 1 jar of peanut sauce
  • salt and pepper to season
  • Coriander (optional)


  1. To spatchcock your chicken, grab a pair of sharp kitchen scissors, cut the back bone and spread chicken flat on to a baking tray.
  2. Rub salt and pepper all over the chicken to season.
  3. Bake chicken in the oven at 180 degrees or follow your manufacturers instructions.
  4. 20 minutes before your chicken is ready pour the jar of sauce over the chicken spread evenly.
  5. Return to oven and cook until completely tender.
  6. Garnish with fresh coriander.

Serve with salad, rice or naan bread and enjoy!
