Vegetarian Noodle Salad

Ingredients:
  • 1 jar of peanut sauce
  • Half a bag of beansprouts
  • Half a cucumber, finely sliced
  • 1 large red onion
  • 1 block of tofu cut into cubes
  • Pre cooked medium egg noodles
  • 1 red chili sliced (optional, add more if desired)
  • Half a pineapple cut into chunks
  • 4 hard boiled eggs quartered

Method:

  1. Warm the peanut sauce on a medium heat
  2. Add all ingredients into a large bowl
  3. Pour peanut sauce over the ingredients and toss until thoroughly mixed and evenly coated.

For all you meat lovers you can add cooked meat or seafood of your choice.
